I have been anticipating this Pursuit United Bourbon Finished with Toasted American and French Oak review. When I was first exposed to Pursuit United’s Straight Bourbon, I was shocked by its wonderfully aggressive and flavor-packed profile. Now that they have finished their straight bourbon with Toasted American and French Oak, I am curious how it differs from their non-finished straight bourbon.

Nose

Immediately the nose reveals brown sugar and mild rye spice. After that initial burst of notes, the oak begins to take over and never relinquishes its hold. This is a 108-proof straight bourbon whiskey, but no evidence of ethanol is on the nose.

Palate

Initially, on the palate, there is a slightly sweet toasted oak. However, toward the back of the palate, it reveals minty rye spice and nutty tobacco notes, which you also get on the finish. The finishing of their straight bourbon has softened their bold palate. It is a nice contrast from their non-finished straight bourbon. The further you get into the tasting experience, the more that oak flavor becomes the theme. While it is finished in toasted oak, I do not get a sense of char (which I like). Being less aggressive than their non-finished straight bourbon, this is a good and easy sipper at 108 proof.
