Initially, the nose of Redwood Empire Whiskey Pipe Dream Cask Strength Bourbon has a lovely, dense, creamy malted chocolate and ethanol aroma that sprinkles in a bit of white pepper. Ethanol keeps the nose hairs tingling on this first pour. There’s almost a mild Dr. Pepper carbonated fruit syrup aroma followed by a slight musty oak.
Palate Review - Rating: 84
My initial thoughts on the palate of this cask strength, 116.8 proof bourbon are nutty, creamy, spicy, and a tad bit oily with a little bit of butterscotch and maple sweetness. Redwood Empire Whiskey Pipe Dream Cask Strength Bourbon is a very interesting pour because it is heavy with peppery baking spices yet has a creamy sweetness. It is an exciting approach with a distinctive and enjoyable result. Salted caramel and pepper take over later in the tasting of this 74% corn, 20% rye, 4.5% malted barley, and 1.5% wheat mash bill.
Finish Review - Rating: 78
The finish of Redwood Empire Whiskey Pipe Dream Cask Strength Bourbon hangs around with black pepper and a mild maple sweetness. However, it is the black pepper that hangs around for a while.
